Egg Patty Specifications: A Spec Checklist for QSR and C-Store Buyers

Hand ticking boxes on a digital checklist with a stylus, buyer spec review

Quick answer

What should an egg patty spec sheet confirm?

Approve an egg patty only after the spec sheet confirms ten things: format, diameter, weight, case pack, ingredients and allergens, nutrition, storage and shelf life, heating and holding, label claims, and inspection documents. Choose a stock item if it fits your carrier and cost per serving; keep searching if any line on the checklist fails.

Egg patty specifications decide whether a sandwich looks right, costs what you planned and passes your allergen and food safety review. Use it before you test samples and sign.

1 to 3: Format, diameter and weight

Start with the sandwich. Pick the format for your carrier, using our comparison of folded egg vs round egg patty vs fried egg patty. Then match the diameter to the bread, and the weight to your target cost and nutrition. For other egg formats, see our guide to egg products for foodservice.

Ask for diameter measured on the frozen patty, and allow for shrink on heating. Our guide to egg patty sizes for breakfast sandwiches lists common diameters by carrier.

Round scrambled patty162 / 1 oz
Round scrambled patty153 / 1.25 oz and 153 / 1.5 oz

Fried egg patty, 4 inch180 / 1.5 oz
Folded egg square180 / 1.5 oz

These packs come from Echo Lake's archived product pages. Confirm current item codes and packs on the spec sheet.

4: Case pack and cost per serving

The pack tells you the count per case and the weight per piece; 180 / 1.5 oz means 180 patties of 1.5 oz each. Cost per serving is the case price divided by the count. Then check how fast a store uses one.

A case that lasts a week or more in a slow store raises questions about thawed life and freezer space. Ask for case dimensions.

5 and 6: Ingredients, allergens and nutrition

Read the full ingredient statement, not just the name. Egg is always a major allergen, and many patty formulas add milk through whey, nonfat dry milk or butter flavor. US labels must declare the nine major food allergens, and sesame joined the list effective January 1, 2023 (FDA).

Ask for nutrition per piece, since that is what goes on your menu board or nutrition guide. If you serve schools, hospitals or senior living, compare sodium per patty. For what each ingredient does, see what egg patties are made of.

7 and 8: Storage, shelf life, heating and holding

Many published spec sheets list frozen storage at 0°F or below, but shelf life and thawed life vary by item. Get three numbers in writing: frozen shelf life, refrigerated life after thawing, and whether the patty can be heated straight from frozen.

Heating instructions should name the equipment, the time and the internal temperature. Test them on your ovens; our guide to reheating frozen egg patties shows what to compare. Also ask for a maximum hold time, because long holding is the main cause of the problems in why egg patties turn rubbery.

9 and 10: Claims, inspection and documents

Claims belong to item codes, not product lines. If your menu says cage-free or egg white, the spec sheet for that exact code must say so. See our cage-free egg products explainer.

Egg products sold in the US must be pasteurized and processed under USDA inspection, under the Egg Products Inspection Act (USDA FSIS). Your supplier approval file should hold:

  • The spec sheet for each item code, with a revision date.
  • The ingredient, allergen and nutrition statements.
  • Heating and handling instructions.
  • A third-party food safety audit certificate, if your program requires one.
  • Contact details for recalls and complaints.

Score the samples side by side

Heat each sample, build the real sandwich and score it.

Red flags, and when a stock patty is not for you

  • The supplier cannot give a spec sheet for the exact item code.
  • Shelf life or heating instructions are missing or vague.
  • The allergen statement does not match your menu claims.
  • No stock diameter fits your carrier without overhang or gaps.
  • Your brand promises eggs cracked to order. Weigh that in our pros and cons of precooked egg patties for QSR and C-stores.

FAQ

What is on an egg patty spec sheet?

A spec sheet lists the item code, description, piece weight and dimensions, case pack, ingredient and allergen statement, nutrition per serving, storage temperature, shelf life and heating instructions. Some also list case dimensions, pallet pattern and certifications. Ask for the current revision for each item you plan to buy.

What does 180/1.5 oz mean on an egg patty case?

It is the case pack: 180 pieces per case, each weighing 1.5 oz. Multiply the two for the net egg weight, here 270 oz or about 16.9 pounds. Divide the case price by 180 to get your cost per patty, the number you need for menu pricing.

How do you buy egg patties wholesale?

Most operators buy through a broadline or regional foodservice distributor, while large chains contract with manufacturers directly. Ask the manufacturer for spec sheets and samples, confirm which distributors carry the item in your area, and check minimum orders and lead times.

What temperature should frozen egg patties be stored at?

Many published spec sheets call for 0°F or below, with no thaw and refreeze. Use the storage temperature and shelf life on the spec sheet for your item, and log freezer temperatures daily as part of your food safety plan.

Do egg patties need USDA inspection?

Yes. US egg products, including the liquid egg used to make patties, must be pasteurized and processed under USDA inspection under the Egg Products Inspection Act. Ask your supplier which plant makes the item and keep the spec sheet on file.
